Salmonella Outbreak in Certain Raw, Red Tomatoes Sickens At Least 145 People in 16 States

WebMD Health NewsReviewed by Louise Chang, MDJune 9, 2008 -- The FDA has broadened its list of tomatoes to avoid because of a salmonella outbreak that has sickened at least 145 people in 16 states since the middle of April.
The FDA and CDC first warned last week of dozens of people in nine states who had gotten sick after eating certain types of raw, red tomatoes.
Salmonella bacteria can cause diarrhea (which may be bloody), fever, nausea, vomiting, and abdominal pain.

Roasted Tomato Soup
From Bobby Flay
10 plum tomatoes, halved lengthwise, seeds removed
1/4 cup olive oil, divided
6 cloves garlic, coarsely chopped
Salt and freshly ground pepper
1 Spanish onion, diced
1 carrot, diced
3 cups vegetable stock
1 tablespoon finely chopped fresh thyme
1 1/2 cups heavy cream
Preheat oven to 325 degrees F.Place tomatoes in a large baking dish and drizzle with 2 tablespoons of the olive oil and sprinkle with the garlic, season with salt and pepper. Roast for 25 to 30 minutes, or until the tomatoes are soft.Heat the remaining olive oil in a medium stock pot over medium heat. Add the onions and carrots and cook until the onions are soft, about 5 minutes.Add the roasted tomatoes, garlic, and the juices that have accumulated.

One thing I have noticed about living in different countries is what is easy to find and inexpensive in one place, may not be in another.
While in the UK and USA, cream of tomato soup is pretty easy to find pre-made and inexpensive, I find it is not the case in the smallish town where I live in Finland. Prepackaged soup (not powdered) is not necessarily that cheap.

Sun Dried Tomato Dip
Modified from Ina Garten
1/4 cup sun-dried tomatoes in oil, drained and chopped (8 tomatoes)
8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/2 cup good mayonnaise
10 dashes, hot red pepper sauce
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
1/2 cup fresh basil, torn into pieces
Puree the tomatoes, cream cheese, sour cream, mayonnaise, red pepper sauce, salt and pepper in a food processor fitted with a metal blade.Add the basil and pulse twice. Serve at room temperature with crackers, croutons, pita crisps, or flatbread.
Makes 2 cups.

Food chains pull tomatoes after salmonella scare, FDA warning

Wawa, McDonald's and other food and restaurant chains will not sell food products containing certain varieties of tomatoes until an outbreak of salmonella affecting the country is contained.
The food chains are taking precautions after the FDA issued a warning Saturday advising people to avoid eating certain types of tomatoes unless they come from states or other parts of the world not associated with the outbreak.
Raw red Roma, raw plum and raw red round tomatoes were implicated in the outbreak, which has affected 145 people in the United States and resulted in 23 hospitalizations since mid-April, according to the federal Food and Drug Administration.

Update Tomato Outbreak - Major expansion of area!
June 10, 2008 11:00 PM: The Food and Drug Administration has expanded its warning to consumers nationwide that a salmonellosis outbreak has been linked to consumption of certain raw, red tomatoes.
At this time, FDA is advising consumers to limit their consumption of tomatoes to the following types of tomatoes.

These tomatoes are easy to make, whats great about them is that you can add them to a simple meal, and totally bring out the flavours and just make it all delicious!
Either you eat them plain, or use as an antipasto, simmer with onions, red wine and herbs for a flavorful tomato sauce with that kick of thyme!
Ingredients:
- 3 pounds ripe plum tomatoes
- 1/4 cup extra virgin olive oil
- 1 tablespoon chopped fresh thyme
- 3 garlic cloves, finely chopped

This is a fast and absolutely delicious recipe from the New York Times. I advise you to try it before the tomato season is over. Just beware of the pimenton - 2 teaspoons make it very spicy.

Have one bowl of this soup and you'll get nearly three quarters of your daily requirement for vitamin C.
Ingredients:
4 large tomatoes, cut into chunks
1 1/2 tsp salt, plus extra for tomatoes
Parchment paper 3 tsp olive oil, divided
1 leek, thinly sliced
1/2 medium onion, diced
4 cloves garlic, sliced
1/4 cup red wine
2 sprigs oregano
1/4 cup plus
2 tbsp chopped flat-leaf parsley
1/4 lb (1 1/2 cups) shelled beans (such as fava, lima or cranberry)
1/4 lb (3/4 cup) flat romano beans, cut into 1-inch lengths
1/4 tsp cayenne pepper
1/4 lb squid, thinly sliced
1 clove garlic, finely chopped
4 slices crusty bread
1 clove garlic
Directions:
Heat oven to 375˚.
Sprinkle tomatoes with salt and place on baking sheet lined with parchment paper; roast 40 minutes.
