Here is a healthy alternative for all you pasta lovers! The sauce isn’t cooked, so it has a fresher flavor than jarred versions. Use the sweetest cherry tomatoes you can find.

SERVES 8
Ingredients
2 tablespoons plus 2 teaspoons olive oil
1 1/2 tablespoons all-purpose (plain) flour
2 garlic cloves, minced
1 cup plain soy milk (soya milk)
1 cup vegetable stock
2 green (spring) onions, including tender green tops, sliced
1/2 cup dry-packed sun-dried tomatoes, soaked in water to rehydrate, drained and chopped
10 ounces fresh cremini or shiitake mushrooms, sliced
1 shallot, minced
tablespoon chopped fresh flat-leaf (Italian) parsley
1/4 teaspoon salt
6 cups baby spinach leaves, chopped
2 cups fat-free ricotta cheese
3/4 cup grated Parmesan cheese
1 egg white
12 no-boil spinach lasagna sheets, about 7 by 3 1/2 inches
1 tablespoon chopped fresh basil
Directions
In a saucepan, heat the 2 tablespoons olive oil over medium-high heat. Whisk in the flour and cook for 1 to 2 minutes, stirring constantly. Add the garlic and continue to whisk until the garlic is fragrant, about 30 seconds.

Sauce:
1/2 cup ketchup
2 Tablespoons white wine vinegar
1 Tablespoon Worcestershire sauce
2 teaspoons molasses
1 teaspoon soy sauce
1/2 teaspoon prepared chili powder
/2 teaspoon granulated garlic
1/4 teaspoon celery salt
1/4 teaspoon liquid hickory smoke
Rub:
1/2 teaspoon kosher salt
1/2 teaspoon celery salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon granulated garlic
One 2 pound tri-tip roast about 1 1/2 inches thick
2 Tablespoons extra virgin olive oil

8 Roma plum tomatoes, halved lengthwise and seeds removed
4 bunches broccoli rabe (rapini), divided into 8 sections
Salt and freshly ground black pepper
1/2 cup plus 2 tablespoons olive oil, divided plus more for coating potatoes
2 finely diced shallots, or 1 white onion, finely diced
1 (750-ml) bottle Marsala
1 cup vegetable stock
1 tablespoon freshly chopped thyme leaves
8 (6-ounce) boneless chicken breasts, skin on
8 ounces smoked mozzarella, sliced
6 to 8 white potatoes, scrubbed and cut into chunks
1/2 cup unsalted butter (1 stick)
1/2 bunch fresh chives, chopped
To roast vegetables, preheat oven to 400 degrees F. Place tomatoes and rapini on a baking sheet and season with salt and pepper and coat with 1/4 cup of the olive oil.

6 ounces linguine
1/2 teaspoon olive oil
2 cloves garlic, minced
1/8 teaspoon crushed red pepper flakes
1 can (14 1/2 ounces) diced tomatoes, undrained
Pinch of sugar
Pinch of coarse-ground black pepper
1 tablespoon chopped fresh basil (or 1 teaspoon dried basil)
2 tablespoons shredded Parmesan cheese
Cook linguine according to package directions, omitting any salt. Meanwhile, heat olive oil in a large nonstick skillet. Add garlic and cook over medium heat until the garlic begins to turn golden (take care not to burn).

8 ounces uncooked whole wheat penne
2 teaspoons olive oil
3/4 pound skinless, boneless chicken breast, cut into bite-size pieces
2 cups chopped onion
2 teaspoons bottled minced garlic
2 cups green bell pepper strips
1 (8-ounce) package presliced mushrooms
1 cup canned crushed tomatoes, undrained
1/2 cup fat-free, less-sodium chicken broth
1/2 teaspoon salt
1 canned chipotle chile in adobo sauce, minced (about 1 tablespoon)
Preparation
Cook pasta according to package directions, omitting salt and fat.
While pasta cooks, heat oil in a large nonstick skillet over medium-high heat. Add chicken; cook 3 minutes or until lightly browned.

This is such a quick and easy way to do this.
Use whatever frozen breaded chicken you have - breaded chicken fillets are good, they are bigger. Fry them in oil until they are golden brown and cooked through - 5 min.

Ingredients:
- 1 cup lentils
- 1 tablespoon olive oil
- 4 garlic cloves, minced
- 1 lb spinach leaves, washed, stemmed & chopped
- 14 ounces canned plum tomatoes
- 3 tablespoons tamari or soy sauce
- 3 teaspoons curry powder
- 1/2 teaspoon ginger
- 1/2 teaspoon cinnamon
- 1/2 cup fat free cheese
Directions
1) Wash lentils. Cook till tender but firm, about 4 minutes.
2) Heat olive oil in large pot & when hot add garlic.
