Maybe I'm being irrational, but I'd like to submit for everyone a problem I have with my boyfriend. I don't need to, but I'll start by saying he's a great guy... tells me every day he loves me, is always very respectful and appreciative for the things I do for him. However, we are at different levels of comfort with roommate situations.

Ground beef is not taboo on a heart healthy diet as long as you choose the leanest cut possible. I usually don't like to endorse a specific vendor, but in this case it's necessary. Laura's Beef packages ground sirloin that is 96% lean, and the company is endorsed by the American Heart Association.

1. Worst fast-food chicken meal
Chicken Selects Premium Breast Strips from McDonald's (5 pieces) with creamy ranch sauce
830 calories
55 grams (g) fat (4.5 g trans fat)
48 g carbohydrates
The only thing "premium" about these strips is the caloric price you pay. Add a large fries and regular soda and this seemingly innocuous chicken meal tops out at 1,710 calories.

This is also from Totally Dairy-Free Cooking and no, I haven't tried it, but it looks easy and sounds delicious!
1 1/2 tsp coriander seeds
4 Tbs tomato paste
1 1/2 oz tamari soy sauce
2 Tbs rice wine
2 Tbs chili garlic paste
1 Tbs lemon juice
1 Tbs olive oil
1 1/2 tsp chili powder
36 medium shrimp, peeled and deveined
6 8-inch flour tortillas or corn tortillas
Guacamole (see my previous posted guac recipe)
Whisk all ingredients together except for the shrimp, chips and guacamole. Add shrimp, stir and refrigerate a minimum of 2 hrs, up to 24 hrs.

These fish packs the right amount of protein, and subbing dressing for mayo eliminates unnecessary fat.
Serves 4
Ingredients:
1 can (6 oz) chunk-light tuna packed in water, drained
1/4 cup reduced-fat salad dressing
8 cherry tomatoes, halved
8 niçoise olives, pitted and sliced
3 cups finely chopped mixed salad greens
6 hard-boiled eggs, sliced
4 whole-wheat tortillas
20 baked potato chips
Directions:
Gently break apart tuna in a bowl.
Mix in salad dressing, tomatoes and olives.

My boyfriend will be leaving for his first tour at the end of the year and we have been avoiding the topic for a long time. Now that it is soon appraching I have taken an interest in doing everything I can to be prepared.

2large garlic cloves
1 medium onion,cut in 8 pieces
2 - 4 jalapeño peppers,quartered
1/2 cup cilantro leaves
1/2 1 teaspoon sugar
2 cans (15oz each) whole tomatoes,
drained
1 tablespoon lime juice
salt to taste
Tortilla chips for serving
Place all ingredients except tortilla chips into blender jar
cover jar with lid
pulse 2 times until fruit and vegetables are chopped.
pour into bowl & serve with tortilla chips :)

I just made this today and it turned out very well. Great meal!
White Chicken Chili
INGREDIENTS:
1 T olive oil
2 med onions, chopped
4 cloves garlic, minced
2 4oz cans chopped green chiles
4 cups chopped cooked chicken
2 t ground cumin
1.5 t dried oregano, crumbled
.25 t cayenne or crushed red pepper (depending on taste)
3 16 oz cans, great northern beans, drained & rinsed
6 cups chicken broth
3 cups grated monterey jack cheese
salt
pepper
sour cream and tortilla chips if desired

Ingredients
1 pound boneless skinless chicken breast halves, cut into 3/4-inch cubes
1 package Chili Seasoning Mix
1 can (14 1/2 ounces) diced tomatoes, undrained
1 can (15 to 16 ounces) kidney, white or pinto beans, undrained
1 can (11 ounces) Mexican-style corn or whole kernel corn, drained
1/2 cup water
1 1/2 cups broken tortilla chips (bite-size pieces)
Shredded Cheddar cheese, sour cream and chopped cilantro (optional)
Directions
1. Heat lightly oiled large nonstick skillet on medium-high heat. Add chicken; cook and stir 5 minutes or until lightly browned.
