So I'm all about the soup lately. I went to lunch with friends on Friday and had tortilla soup then Sunday I was really craving it again. I decided to try my hand and make my own.

I posted this before but tonight I made it for the first time. It hought I would repost it and give my review
3 cups chicken stock
1 pound chicken tenders
1 bay leaf, fresh if available
1 tablespoon extra-virgin olive oil, 1 turn of the pan
4 slices thick, smoky center cut bacon, chopped
1 onion, finely chopped
4 cloves garlic, chopped
2 chipotles in adobo, chopped, plus 2 tablespoons sauce
1 (28-ounce) can crushed fire roasted tomatoes
Salt
4 cups lightly crushed corn tortilla chips
2 cups shredded fresh smoked mozzarella or smoked sharp white Cheddar, 3/4 pound
1 lime, cut into wedges
1/2 red onion, chopped
Freshly chopped cilantro leaves, for garnish
Bring broth to a simmer and add chicken tenders, poach 6 to 7 minutes with a bay leaf.
While chicken poaches, heat extra-virgin olive oil in a medium soup pot or deep skillet over medium-high heat.

I LOVE this soup. Now that it is getting colder out its time to cook a hearty soup.
This soup is really easy to change the ingredients and mix things up.

The same friend that sent me the link to the 365 crockpot recipes also included the recipes and assembly directions for how to make "10 casseroles in 3 hours". That might be a little deceiving because it's actually only 5 different recipes, but they make double portions. Anyway, I thought I would pass this information on to you all, just in case you might have a free afternoon to make all of these.

Flour Tortilla Crisps with Parmesan
Light and crispy, this cracker or flat bread recipe is great to serve when needing a delicious tasting appetizer or garnish for soups, salads and chilies.
Ingredients
- 4 flour tortillas, 8 inch diameter sliced into strips
- 3 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1 teaspoon garlic pepper
- 1/3 cup parmesan cheese
Directions
Preheat oven to 375ºF.
1) Cover cookie sheet with aluminum foil for ease of cleanup.

My mother is a reader of Woman's Day Magazine (whose recipes I usually love) and she passed on these 2 ingredient recipe cards to me. Sure, some of them are a little odd and I will probably never, ever attempt, but there were a few that immediately grabbed my attention and I can't wait to try out! (Pineapple with coconut sorbet...:DROOL:)

If you've had a challenging morning at work, a good lunch can certainly lift your spirits and inspire you to carry on. For some, though, the motivation to prepare such a meal is hard to stir up, particularly at times when relaxing is what you want to do.
It's understandable that after a long day at the office, preparing and eating supper and getting things tidied up, the last thing many people want to do is think about what to make for lunch the next day.

I just found this blog and thought it was a great idea to share! If nothing else, most of the meals can be made at the last minute, so they're perfect for those nights where you just can't make up your mind what you want to make. And they're good for those times you need to stretch your budget a little bit!

While Mexican food is one of the favorites at our house, it seems like lately we simply haven't had the time to make the trip to our favorite restaurant. So, why not bring a taste of Mexico to our house? Particularly when the recipe is simple, but looks packed with flavor!
