Tonight my boyfriend and I both came home from work very late and I elected him to make something for dinner that was quick and easy! Tuna Melt! If I would have made it, I would have made the tuna and toasted the bread with the cheese on top of it in the toaster oven but not my boyfriend, he took it to a whole other level.

Asian Tuna Tartare
From Food & Wine magazine
1/4 cup corn oil
2 teaspoons grated fresh ginger
1 pound sushi-grade tuna
1/4 cup finely chopped cilantro
1 teaspoon minced jalapeño
1 1/2 teaspoons wasabi powder
1 teaspoon toasted sesame seeds
1 tablespoon finely chopped scallion
1 1/2 tablespoons lemon juice, plus half a lemon
Sea salt and freshly ground pepper
1 tomato--peeled, seeded and cut into 1/8-inch dice
20 best-quality potato chips
In a bowl, combine the corn oil and ginger and let stand at room temperature for at least 2 hours. Strain the oil.With a very sharp knife, cut the tuna into 1/8-inch dice.In a large bowl, combine the tuna with 3 tablespoons of the ginger oil, 3 tablespoons of the cilantro and the jalapeño, wasabi, sesame seeds, scallion and lemon juice. Mix gently and season with salt and pepper.Stand a 1 1/2-inch-tall and 2 1/4-inch-round mold or a biscuit cutter in the center of a salad plate.

Who doesn't love a recipe that includes potato chips? Particularly the crushed ones that are just waiting to be thrown away from the bottom of the bag...(I recommend Utz!)
Tuna Noodle Casserole

Makes 8 servings.
1 (16 ounce) package uncooked pasta shells
2 (6 ounce) cans tuna, drained
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of celery soup
1 1/4 cups milk
1 teaspoon salt
1/4 teaspoon ground black pepper
1 teaspoon crushed garlic
4 slices processed American cheese
1 1/2 cups crushed potato chips

Now that grilling season has come to a close, head inside and sear up some tuna. It's delicious and high in omega-3 fatty acids that may help reduce your risk for heart disease.
Makes 4 servings
Ingredients:
Vegetable Slaw 2 carrots, peeled
2 parsnips, peeled
2 each green and red bell peppers, cored and seeded
1 small sweet onion
1 jalapeño pepper, cored (and seeded if less heat is desired)
2 tbsp chopped fresh cilantro Vanilla Dressing
3 tbsp sugar Seeds from 1/2 vanilla bean
1/2 cup rice vinegar
1/2 cup nonfat sour cream
Sea salt
White pepper
Sesame Seared Tuna 1/4 cup white sesame seeds
1/4 cup black sesame seeds
1 tbsp wasabi powder (found at Asian grocery stores)
Vegetable oil cooking spray
1 tbsp sesame oil
2 pieces tuna loin (about 8 oz each), cut in half

Ingredients:
1 can (12 ounces) water-packed solid white tuna, drained
1/3 cup (3 ounces) fat-free plain yogurt
1 can (4 ounces) crushed pineapple, drained
1 celery rib, finely chopped
1/4 cup sweet pickle relish
1/4 cup chopped pecans
1 teaspoon yellow mustard
1/8 teaspoon ground cinnamon
Directions:
In a medium bowl, mix tuna, yogurt, pineapple, celery, relish, pecans, mustard, and cinnamon.

Here is my Tuna Pita recipe as promised forever ago! Of course it is also really easy to make...always nice
What you need:
1 whole wheat Pita (cut in 1/2, so you have one side of the circle)
1 TBS Reduced fat Mayo
1 stalk Celery (chopped)
2TBS Parmesan cheese/grated (no mixed kinds, they are more points)
Dash of Ground pepper
Whatever else you like in tuna
1.) Preheat oven to 350 or use a toaster oven (which is more efficient)
2.) Mix the Tuna with the mayo, pepper and celery (after drained)
3.) Spread over pita with the cut side of the pita facing upward
4.) Sprinkle parmesan over the top to cover the tuna
5.) Finally put the whole thing in the oven for about 20min or until cheese is browned
*The tuna is like molten lava when hot, so be careful! Trust me!

According to the article I found this in, this recipe costs $1.54 per serving. Not bad! And as I have most of it in the house already as pantry staples, even better!

These fish packs the right amount of protein, and subbing dressing for mayo eliminates unnecessary fat.
Serves 4
Ingredients:
1 can (6 oz) chunk-light tuna packed in water, drained
1/4 cup reduced-fat salad dressing
8 cherry tomatoes, halved
8 niçoise olives, pitted and sliced
3 cups finely chopped mixed salad greens
6 hard-boiled eggs, sliced
4 whole-wheat tortillas
20 baked potato chips
Directions:
Gently break apart tuna in a bowl.
Mix in salad dressing, tomatoes and olives.

Every now and then we need something light and easy to make.
I always remember tuna when I think of a "healthy" easy snack.
Cucumbers go great with tuna, and what could be better then a vegetable!?
