This is one of those dishes that helps you remember the flavors of Thanksgiving any day of the year. I can't wait to test it out! Plus, it's a casserole that cooks fairly quickly and I can't help but love that too!

There are a couple of myths told each year at my house on Thanksgiving. One is that Uncle Lou will finally get the hint by Friday afternoon that he's overstayed his welcome and will leave without swiping most of the leftovers. The other is that there's a natural chemical in turkey called tryptophan that makes you sleepy after the Thanksgiving meal.

By the time you read this, my head will be thump-thumping - but this is not a standard-issue New Year's Day hangover. No.

The holidays should be about friends, family, and a healthy portion of pumpkin pie, not guilt over gaining weight. This is one of my favorite traditions from Thanksgiving, My mom always made this relish, it's really good on turkey! You can even make a sandwich with turkey leftovers and this relish the next day.
INGREDIENTS:
3 cups fresh whole cranberries
1/2 cup sugar
2 tablespoons finely grated orange zest
1/2 cup water
PREPARATION:
Combine all ingredients in a saucepan and bring to a simmer over medium-low heat.

I hope you have all been enjoying the recipes that I've been posting. I absolutely love to cook, and while I love to cook food that is more "gourmet", so to say, the reality of my life is that I just don't have the time. I cook 3 or more times a week (utilizing leftovers!), and really feel that good food doesn't have to be complicated or take all day.

I am not the hugest fan of eggs, but I love frittatas. They are a snap to make and you can use whatever you want from your fridge.
Frittatas are great for breakfast, brunch, lunch, and dinner depending on your fillings.
