Lemon Truffle Parfaits
From Suite 101
Make this dessert ahead of time and store it, well covered, in the fridge. When you're ready to serve, top with the mint leaves and a dollop of whipped cream and serve with long iced tea spoons.
1/2 cup whipping cream + some for topping
1/2 cup white chocolate chips
1 cup lemon curd (make your own or buy it store bought)
6 sugar cookies
1 cup fresh raspberries
4 mint sprigs
In small heavy saucepan, combine 1/2 cup whipping cream with the white chocolate chips.

I have a question that I hope someone can answer. I cannot stand cool whip (as my Dad would call it "an edible oil product"). It leaves a nasty oily feel in your mouth and doesn't taste anywhere close to real Whipping Cream.

So some of my recipes have called for whipped cream, or cool whip, but since pretty much all major brands of whipped cream contain milk (even tho' they say Dairy Free on the tub), Soyatoo Vegan Whipped Cream is great alternative. It isn't real sweet, so if you are craving a bit more sugar, marshmallow cream might be up your alley. (You can mix a bit of soy or rice milk in it if it's too thick).

I bet that "Heroes" star Ali Larter is relieved that she's on a hit series so that she'll no longer going to be known as the whipped cream bikini girl from "Varsity Blues."
I think her outfit here is very classy and elegant. Perfect for an office holiday party or a fancy luncheon.

I needed to make a small batch of cupcakes for a man at church, so I thought this would be a perfect opportunity to both try out The Pioneer Woman's Best Chocolate Sheet Cake Ever and to show you a small tutorial on how I make buttercream icing and how to pipe it onto cupcakes. I felt the need to try this recipe because I have heard so many wonderful things about it, but I wanted to try it in cupcake form, so I halved the recipe. Here's the recipe and the following pictures that I took during the process.

Chocolate almond crust with almond cream baked in, topped with pudding cream and ripe raspberries. Delish!
I saw some beautiful raspberries at the store and just had to try them with something.
