Well, I finally got to baking a Red Velvet in the family... which means, I got to try a piece! I was running low on food colouring, so the colour isn't quite as intense as it should've been.

1 pound finely chopped white chocolate
1 1/2 teaspoons nut or plain oil
1/2 cup dried cranberries
1 1/4 cups shelled pistachio nuts, toasted and papery coating peeled
Equipment: Chocolate thermometer
Tempering the chocolate for the bark requires a double boiler. If you don't have a double boiler, improvise one by using a saucepan and a stainless steel bowl: Nestle the bowl into the saucepan, allowing a few inches of space to remain between the bottom of the bowl and the bottom of the saucepan. Keep an extra bowl of a similar size on hand to transfer the chocolate for cooling.

I found this recipe online at foodtv.com, and I must say, they are a HIT! I made them for a meeting one day, and have been asked about them ever since!
My Hints: Instead of simply softening the butter, I just about completely melt it before combining it with the brown sugar.

More blueberries!! BUT now there's chocolate :)So people seemed to react well to the Blueberry Ricotta Pancakes so I found another recipe with blueberries in it, and some white chocolate for sanity!! These I want to make this weekend too...man it is a weekend of baking and blueberries for me!

OKAY, I went to this restaurant in DC, Busboys and Poets, and they served this delectable bread pudding that was made with white chocolate and banana bread, two of my most favorite things.
I found a recipe for it, and I made it in the slow cooker last night, and it was heaven! I did some substitutions to make it a little more healthy, but in general, this is a sinful treat.

Ingredients:
1 cup sifted flour
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon salt
1/2 cup chopped walnuts
1/3 cup butter or margarine
1 cup packed brown sugar
1 egg -- beaten
1 tablespoon vanilla extract
1/2 cup white chocolate chips
Maple butter sauce:
3/4 cup maple syrup
1/2 cup butter
3/4 cup brown sugar
1/2 cup walnuts, chopped (optional)
Directions:
Preheat oven to 350º.
Sift flour, add baking powder, baking soda, and salt.

Ingredients:
1 cup butter, softened
1 cup granulated sugar
3/4 cup light brown sugar, packed
2 teaspoons vanilla
1/2 teaspoon salt
2 eggs
2 1/2 cups all purpose flour
1 teaspoons baking soda
12 ounces white chocolate chips
1 cup macadamia nuts, chopped
Directions:
Heat oven to 375 F. In large bowl, beat butter, granulated sugar, brown sugar, vanilla, and salt with electric mixer until creamy. Add eggs, beat well.

Oreo Truffles
This weekend, I made these delicious Oreo Truffles. I found the recipe at Bakerella. They were so easy to make and SO good!

175 grs self raising or all purpose flour
125 grs unsalted butter
125 grs sugar
3 tbsp cocoa or drinking chocolate powder
3 300g bar white chocolate
300g dark chocolate
Preheat oven 180ºC, prepare a six cup muffin tin. Chop the dark chocolate bar and one of the white chocolate bars. In a food processor, put all the ingredients, except the two unchopped white chocolate bars.
