I'm sure most of us couldn't imagine a life without bread: sandwiches, toast, bread baskets, bread bowls, and so forth. It is an integral part of our food culture and seems to be a major player in every meal. However, with the rise of low carb diets, the concept of "good carbs" and "bad carbs," plus the new offerings of "whole wheat" everything, it's easy to get confused about which breads are healthy and which are not.

Ingredients:
4 cups whole wheat flour
2 cups unbleached all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon white sugar or brown sugar
1 cup skim milk
1 teaspoon lemon juice
Directions:
Mix milk and lemon.
Combine dry ingredients.
Add milk and lemon mixture (buttermilk may be used instead).

1 cup all-purpose flour
3/4 teaspoon baking soda

2 cups semisweet chocolate chips
1/2 cup chopped walnuts (optional)
DIRECTIONS
1. Preheat the oven to 375 degrees F (190 degrees C).

Serves: 6, Prep Time: 5 minutes;Cook Time: 30 minutes
Ingredients:
1 pound whole–wheat penne pasta
Cooking spray
1 ½ pounds boneless chicken breast
1 large jar tomato sauce
1 ½ cups part–skim shredded mozzarella
Directions:
Preheat oven to 375°F.

Whole Wheat Banana Bread
adapted from the American Institute for Cancer Research
What you need:
Topping:
1/2 banana, chopped
1/2 cup rolled oats (not quick-cooking or instant)
1/4 cup Sucanat or light brown sugar
Bread:
1 cup whole wheat flour
1 cup all-purpose flour
1/2 cup Sucanat or light brown sugar
2 tsp. baking powder
1/4 tsp. salt
2 ripe medium bananas
2 eggs, lightly beaten
1 cup lowfat buttermilk

Whole Wheat Pancakes
adapted from Martha Stewart's Every Day Food
1 cup whole wheat flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 cup non-fat yogurt
1/3 cup non fat milk (more to thin as needed)
2 tablespoon canola oil
1 egg
In a small bowl, whisk together dry ingredients and set aside.
Whisk together milk, yogurt, oil and egg. Add dry ingredients and mix until just moistened. Add more milk to make batter to your liking.
Cook on oiled skillet or griddle.

Use baby arugula for this dish if you can; the flavor is more mellow.

8 ounces uncooked wholewheat shells
3 tablespoons extra-virgin olive oil
1 ¾ cups cooked chickpeas (about one 15-ounce can)
4 packed cups arugula, chopped
1/3 cup packed golden raisins
1/2 cup oil-packed sun-dried tomatoes, sliced
4 ounces crumbled feta Salt and freshly ground black pepper
1/2 cup chopped walnuts (optional)
Directions:
Bring a large pot of water to a rolling boil. Add shells and cook about 8 minutes, or until tender but still al dente.
