Summer is right around the corner and nothing says summer like grilling. This fuss-free veggie dish can be prepared ahead and kept at room temperature before being tossed with the greens. The recipe contains quite a high percentage of calories from fat because of the olive oil, but the total calorie count is pretty low.

Creamy and cool, macaroni salad is a perennial summer favorite.
Serves: 6 Prep Time: 15 minutes Cook Time: 1 hour, 15 minutes
Ingredients:
2/3 cup dry whole-wheat fusilli
2/3 cup dry regular fusilli
1/4 cup reduced-fat mayonnaise
1/4 cup nonfat plain Greek yogurt
2 tablespoons apple cider vinegar
1 ½ teaspoons Dijon mustard
1/2 teaspoon salt, or to taste
1/4 teaspoon freshly ground black pepper, or to taste
2 medium carrots, grated
1/2 red or yellow bell pepper, finely chopped
3 scallions, thinly sliced
3 tablespoons chopped fresh parsley
Directions:
In a medium saucepan, bring 2 quarts of water to a boil.
Cook fusilli for 10 minutes, or until al dente.

Don't ask me where I found this recipe, I read it online somewhere and then adapted it from memory.
INGREDIENTS (all measurements are approximate)
2 cloves garlic, minced
1 large shallot, minced
1 large zucchini, ends cut off and cut in half lengthwise
1 large or two small yellow squash, ends cut off and cut in half lengthwise
1/2 large green pepper, sliced
1/2 large red pepper, sliced
1/2 red onion, sliced into thick rings
palmful parsley, chopped
2 tbsp olive oil
1/4 cup white wine
few splashes soy sauce
1/2 cup chicken or veggie broth (I used my own homemade veggie broth but any broth is fine)
Cooked spaghetti or linguine (we used wheat pasta because we are dieting)
salt and pepper
PREPARATION
Grill the zucchini, yellow squash, peppers and onion until soft but not mushy. We used our Foreman grill because it's cold outside
When the veggies are done, cut them into bite-sized pieces.

You can use any vegetable combination in this dish, depending on what looks good.
Serves: 4 Prep Time: 15 minutes Cook Time: 15 minutes
Ingredients:
3 tablespoons extra-virgin olive oil
1 cup sliced red onion
¼ teaspoon salt
1 ½ cups small broccoli florets
1½ cups small cauliflower florets
1 tablespoon minced garlic, divided
1 ½ cups green beans, halved lengthwise
1 cup sugar snap or snow peas, ends trimmed &frac; medium red or orange bell pepper (or both), thinly sliced &frac; small yellow summer squash, sliced 8 ounces uncooked rainbow fusilli
2 scallions, minced
3 tablespoons minced flat-leaf parsley
3 tablespoons minced basil
2 tablespoons freshly grated Parmesan Freshly ground black pepper
2 to 3 tablespoons pine nuts, lightly toasted (optional)
Directions:
Bring a large pot of water to a boil. Meanwhile, heat oil in a large skillet.

- 2 bell peppers (1 red and 1 yellow)
- 3 cloves of garlic
- olive oil
- salt and pepper
Preheat the grill of your oven at 482°F (250°C).
Cut the bell peppers in half.

Mini Philly Cheese Steak Crostini
From Vox
1 1/2 pounds flank steak
2 tablespoons grill seasoning
Salt and freshly ground pepper
2 tablespoons extra-virgin olive oil, divided plus some for drizzling
2 large yellow onions, finely chopped
2 large red bell peppers, finely chopped
1 cup beef stock
2 crusty French baguette, sliced on an angle about 1/2-inch thick
2 cups shredded provolone cheese
Preheat a grill pan or an outdoor grill to medium-high heat and preheat oven to 400°F. Season the steak on both sides with salt, freshly ground pepper and grill seasoning. Drizzle with olive oil and brush to coat in the oil.Transfer the steak to the grill and cook on each side for about 5-6 minutes for medium rare.
