Ziti is absolutely one of my favorite pastas. I'm not sure what it is about it - the size, the shape, whatever - but whenever I'm not sure of what pasta to get, I always get what I consider the staples: farfalle, penne, and ziti. (And occasionally rigatoni - gotta mix things up.)
Ziti Casserole
From Fresh from the Vegetarian Slow Cooker
2 tablespoons olive oil
1 large onion, minced
2 garlic cloves, minced
One 28-ounce can crushed tomatoes
One 12-ounce package frozen vegetarian burger crumbles or 1 lb browned ground beef or turkey
1 cup hot water
1/2 cup dry red wine
1 tablespoon chopped fresh basil leaves or 1 teaspoon dried
Salt and pepper
8 ounces ziti, cooked according to package directions, drained and rinsed
2 tablespoons chopped fresh parsley leaves
1/4 cup freshly grated Parmesan or soy Parmesan cheese

For those of you who are unaware, I am a total fanatic about ziti. I have no idea why I'm absolutely in love with this form of pasta, but it's always in the house or on the grocery list.
Lately, I've been serving it with pesto sauce (So good!), but this recipe may inspire me to try something a little different.

After $25k in tuition, my little brother left the CIA. When he came home, the only dish he could really replicate was his baked ziti. The family joke is now the "$25,000 Baked Ziti," which I have updated to make vegetarian.

I'm always looking for different ways to add artichokes to a meal and this has become one of my favorites. It's easy, simple, and quick - three of the best words when it comes to me and the kitchen! Right now, this dish is sitting in my fridge, waiting to be eaten for dinner later this week.

2 1/2 cups of any small pasta (rotini, ziti, spirals)
Pasta sauce - whatever you prefer - I used one with sausage in this picture
Ricotta cheese
Mozarella Cheese
Boil the noodles, but under cook them by about 2 minutes.
Warm the sauce in a saucepan. After you drain the noodles, pour them into an 8x8 baking dish.
