As you've probably noticed, we are sort of obsessed with avocados here, and on the rare occasion when I have leftover guacamole, I cannot bear to see it go to waste. So after whipping up a batch of homemade guac for a recent party, I used the remaining deliciousness to make a vegetarian sandwich on my new favorite chili bread.
If you've got some of Cinco de Mayo's best condiment lying around, make your own seis (or siete or ocho) de Mayo sandwich.

Celebrate Cinco de Mayo tonight with a Mexican meal that comes together in minutes. These chicken fajitas are so simple a child could make them! Chicken strips and chunky vegetables are tossed with a super quick marinade of chile powder, cumin, and water.

Tonight I'll be celebrating Cinco de Mayo with margaritas and a Mexican meal, but for now I'm honoring the holiday with a compilation of pesos through the years. Mexican money goes back much further than the notes I've selected, but you'll find about 100-years worth of peso evolution in the slides. Which one is your favorite?

Thanks to the continued swine flu threat, travel to Mexico is unfortunately out of the question at the moment. But as soon as the danger of contracting the virus wanes, I want to book tickets to Puebla, Mexico, to stay at La Purificadora. This boutique hotel, designed by the architecture firm Legorreta + Legorreta, is located within an ex-water purification plant.
