This super fresh and deliciously fragrant salad is a wonderful side dish to quesadillas, enchiladas, or carnitas. A tex mex delight, this recipe can be made with frozen corn or later in the summer with corn cut right off the cob. Bring to a potluck or picnic and make it a day in advance, so the flavors have time to meld together.

For dinner tonight, serve a hearty, Mexican inspired salad. There are several steps to this recipe, but taking the time to prepare each component makes for a fresh, filling dish. The corn and black beans are roasted with onions and garlic to maximize the flavor.

Since fresh corn is still in season but won't be for much longer, why not use it to make this quick and simple dish. Honestly, it'll only take you about 15 minutes to make it. It makes a great side dish, a topping on burgers, or I like to scoop it onto my garden salad.

It's World Vegetarian Month and many people are going meat-free for their health, but others are taking their diets to a whole new level — going raw. A raw food diet consists of consuming unprocessed, preferably organic, whole, plant-based foods, at least 75 percent of which should be uncooked.
A raw-food eater might enjoy uncooked veggies, fresh and dried fruits, nuts, seeds, seaweed, soaked dried beans, young coconut milk, and sprouted seeds and breads.

Until I discovered this recipe, I'd never considered eating raw corn off the cob. But since devouring these chile-rubbed shrimp with avocado-corn salsa, I've been adding raw corn to all of my salads. Now that you're a pro at cutting corn off the cob, try enjoying Summer's sweet bounty in a spicy shrimp taco.

Although cooked corn eaten right off the cob is a classic Summer side, my favorite way to enjoy in-season corn is raw, stirred into a salad with basil and tomatoes. The kernels are slightly sweet, juicy, and have a nice light crunch. Raw corn can be mixed with everything from black beans to greens to fruit, and they are delicious in soup.

If you're looking to cut calories at lunchtime (or anytime really), ditch the fatty salad dressings and try topping your veggies with salsa instead. This south of the border condiment is incredibly low in calories; two tablespoons contains just eight calories. The tangy tomato concoction offers a spicy kick with plenty of flavor to go around, making salads anything but dull.

Tonight, serve your family a meal that comes together in minutes. This tostada recipe is great because it's full of flavor and texture. There's a satisfying crunch thanks to the tostada base, a crispness from the filling black bean and corn salad, and richness provided by the cheddar cheese and sour cream.

When I'm on the road and in need of quick meal, I sometimes stop at Moe's Southwest Grill. It's like a Mexican version of Subway — you pick a type of burrito, taco, fajita, salad, or quesadilla, and then you choose exactly what goes in it (and you can watch them make it too). They use fresh veggies, but they don't use lard.

Mexican food is not only one of my favorites, but my kids love it as well – a working mother's dream come true. While beans, a staple of the Mexican diet, are super healthy a super burrito is not. Here are my tips on how to eat healthy and low cal when eating foods from south of the Rio Grande.
