Last week, I pounded some pork cutlets and put them on the grill. They were such a smash hit with my crowd that I'm going to use the same technique again this weekend — only this time, with boneless, skinless chicken breasts. I'll be coating chicken paillards with a marinade that's filled with my favorite flavorings, like grainy French mustard, shallots, and dill, and serving it alongside cherry tomatoes tossed with the same bright dressing.

One of my favorite soups of all time is avgolemono, a traditional Greek soup made of lemon, chicken, and eggs. I love it so much that even when I'm not in the mood for steaming-hot soup, I'll still search for something else (like a pasta) that incorporates the same creamy, tangy flavors.
This chicken, plated with orzo, carrots, and avgolemono sauce, is exactly the type of recipe I'd turn to.

I was captivated when I first saw this TeamSugar photo — the potato and meat in the soup look chunky and hearty, and I can just taste the dill on the tip of my tongue. Salmon and dill are a classic flavor combination that make for a delicious quick dinner. This meal is super simple with minimal chopping and dishwashing. A prepared horseradish sauce enhances the taste of the salmon and potatoes.

I was checking out all the great recipes over on TeamSugar and came across this gorgeous roasted salmon with cucumber, tomato & dill salad posted by friedwonton. It looks perfect for a light summer meal, and I love how all the color jumps off the plate. Speaking of plate, she's even included plating directions in her recipe!

One great thing about Summer is that the veggies are so delicious, they taste great in the simplest of salads. One of my favorite easy weeknight sides is this cucumber salad with fresh dill. Dressed with nothing but a little vinegar, salt, and sugar, these cukes are fresh and sweet just like summertime.
