While one could easily serve red, white, and blue parfaits at a 4th of July party, I prefer to give guests a more all-American dessert — in the form of a crowd-pleasing cupcake. When I saw these adorably patriotic cupcakes in the current issue of Martha Stewart Living, I knew they would be on the menu at my Independence Day celebration.
The vanilla cake batter is dotted with fresh blueberries before being baked.

We are currently fixated on red, white, and blue foods, and this berry lemon meringue cake is absolutely no exception. If you're short on ideas for an Independence Day dessert, this cake would be perfect. After all, what could be more festive (and all American) than super-seasonal berries, moist white cake, and a fluffy meringue topping?

I love coconut cake. With its moist pudding-like cake layers, thick fruity filling, smooth cream cheese frosting, and crunchy toasted coconut flakes, it's a wildly scrumptious dessert. My guy's favorite dessert of all time is strawberry shortcake, and for weeks now, he's been begging me to make it. Since the beloved berries are starting to turn up at the farmers market, I finally decided to win him over with a luxuriously creamy strawberry layer cake.
Unfortunately, the day I baked this cake, the city of San Francisco had record-high temperatures, something that my cool, whipped cake wasn't so thrilled about — it wound up being a classic case of theirs versus mine.

My girlfriend Melissa's sister is diabetic and has to really watch her consumption of sweets. That's why Melissa decided it would be best not to serve cake at the 30th birthday brunch she was throwing her sister. However, no birthday is complete without some sort of candle and singing ceremony.
