Although the recipe doesn&#039;t call for it, I mixed a couple of tablespoons of cheese in with the rice before stuffing the peppers. However the Mexican version is made with fresh pork, and needs to be cooked, whereas the Spanish version uses smoked pork and can be eaten without cooking.
