In honor of Cinco de Mayo this week, I asked you to put together outfits completely inspired by the festive holiday. Red, green, yellow - the more vibrant the better.

Health Confessional: Share It and Move On

Confessing my health and fitness slip-ups to you makes me feel human again, especially after reading your confessions. I've got a new one to make . . .

There was a little too much ole in my Cinco de Mayo celebration. I got carried away at a Mexican potluck I attended last night and am paying a pretty peso for my dining decisions today. Somehow, a few harmless chips dipped in guacamole turned into more chips and five-layer dip, a couple carnitas tacos dressed with sour cream, two helpings of cheesy Mexican lasagna, and a decadent chile-spiced brownie à la mode for good measure. And, yes, there were margaritas. As you can imagine, I rolled myself home feeling a bit ill.

'Wich of the Week: Seis de Mayo Sandwich

As you've probably noticed, we are sort of obsessed with avocados here, and on the rare occasion when I have leftover guacamole, I cannot bear to see it go to waste. So after whipping up a batch of homemade guac for a recent party, I used the remaining deliciousness to make a vegetarian sandwich on my new favorite chili bread.

If you've got some of Cinco de Mayo's best condiment lying around, make your own seis (or siete or ocho) de Mayo sandwich. To see how I did it, read more.

Seis de Mayo Sandwich
Original Recipe

Ingredients

4 slices spicy artisan bread, such as chile bread
4 tablespoons guacamole
6 slices Roma tomato
4-5 slices mozzarella cheese
10 thin slices of cucumber
1 cup alfalfa or clover sprouts
2 leaves of romaine lettuce

Directions

Preheat oven to 350 degrees.
Place two of the bread slices on a work surface and cover with 1 tablespoon guacamole. Top each piece of bread with three tomato slices, followed by 2-3 slices of mozzarella.

Place all four slices of bread directly on the oven rack and heat for 5 to 7 minutes, until bread is toasted and cheese is melted.

Evenly lay the cucumber slices on top of the melted cheese. Cover each with sprouts and lettuce.
On the two remaining bread slides, spread the rest of the guacamole, then place bread guacamole side down on lettuce.

Cut in half and serve.

Makes 2 sandwiches.

Healthy Cinco de Mayo Recipe: Addictive Sweet Potato Burritos

Happy Cinco de Mayo! For many of us, the holiday provides a reason to enjoy delicious Mexican food. I'm a sucker for the spicy cuisine, but it's not always the healthiest fare. Ramp up the nutritional content of your dinner by complementing your chips and salsa with a healthier main dish. These filling sweet potato burritos offer a traditional flavor kick with the added benefit of vitamin-rich ingredients.

This recipe is flexible to suit your personal taste preferences. I substituted black beans for the kidney beans in the original recipe, opted for whole wheat tortillas instead of flour ones, used yams instead of sweet potatoes, and went light on the shredded cheese. My burritos were dressed in salsa and avocado with a side of light sour cream, but the options are endless. Make this a vegan dish by withholding the cheese and sour cream.

Addictive Sweet Potato Burritos
Allrecipes

Ingredients

1 tablespoon vegetable oil
1 onion, chopped
4 cloves garlic, minced
6 cups canned kidney beans, drained
2 cups water
3 tablespoons chili powder
2 teaspoons ground cumin
4 teaspoons prepared mustard
1 pinch cayenne pepper, or to taste
3 tablespoons soy sauce
4 cups cooked and mashed sweet potatoes
12 (10 inch) flour tortillas, warmed
8 ounces shredded Cheddar cheese

Directions

Preheat oven to 350 degrees F (175 degrees C).
Heat oil in a medium skillet, and saute onion and garlic until soft. Stir in beans, and mash. Gradually stir in water, and heat until warm. Remove from heat, and stir in the chili powder, cumin, mustard, cayenne pepper and soy sauce.

Divide bean mixture and mashed sweet potatoes evenly between the warm flour tortillas. Top with cheese. Fold up tortillas burrito style, and place on a baking sheet.

Bake for 12 minutes in the preheated oven, and serve.

Makes 12 burritos. May be made ahead of time, individually frozen, and heated.

Celebrate Cinco de Mayo tonight with a Mexican meal that comes together in minutes. These chicken fajitas are so simple a child could make them! Chicken strips and chunky vegetables are tossed with a super quick marinade of chile powder, cumin, and water.

Then, the ingredients are dumped into a searing hot pan. Once cooked, serve with the usual fajita fixings - shredded lettuce, grated cheese, warm tortillas, spicy salsa, and cool sour cream. For the ultimate fiesta, pair with guacamole and margaritas. Get the recipe and read more.

Chicken Fajitas
From Food and Wine

Ingredients

1 teaspoon pure chile powder
1 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1 tablespoon cornstarch
1/4 cup water
3 tablespoons extra-virgin olive oil
1 whole skinless, boneless chicken breast (about 1 pound), cut into 1/2-inch strips
1 green bell pepper-cored, seeded and cut into thin strips
1 medium onion, thinly sliced
2 tablespoons fresh lime juice, plus lime wedges for serving
8 flour tortillas, warmed in the microwave
Shredded lettuce, shredded cheddar cheese, salsa and sour cream, for serving

Directions

In a resealable plastic bag, combine the chile powder with the salt, cumin, onion powder, garlic powder, cornstarch, water and 2 tablespoons of the oil. Add the chicken, bell pepper and onion, seal and knead gently to coat. Refrigerate for 15 minutes.
Heat the remaining 1 tablespoon of oil in a large nonstick skillet until shimmering. Empty the contents of the bag into the skillet and cook over high heat, stirring occasionally, until the vegetables are crisp-tender and the chicken is cooked through, about 6 minutes. Remove from the heat and stir in the lime juice.
Transfer the chicken and vegetables to a large bowl and serve with the warmed tortillas, lettuce, cheese, salsa, sour cream and lime wedges.

Serves 4.

Cool Idea: A Water Purification Plant Transforms Into a Boutique Hotel

Thanks to the continued swine flu threat, travel to Mexico is unfortunately out of the question at the moment. But as soon as the danger of contracting the virus wanes, I want to book tickets to Puebla, Mexico, to stay at La Purificadora. This boutique hotel, designed by the architecture firm Legorreta + Legorreta, is located within an ex-water purification plant. Working around the existing structure, the hotel is a mixture of austere, modern design and unexpected materials. I love how the use of modern furniture (such as lucite) and architectural features (such as an amazing glass staircase) contrasts beautifully with the original building's timberframe structure and stonework.

The hotel's 26 rooms run for $155–295 midweek, and $205–395 on the weekends, which also includes breakfasts. Other amenities include a bookstore, bar, gym, outdoor rooftop pool, and a gorgeous outdoor fireplace. While the industrial-chic style of the hotel may seem at odds with the colonial style of Puebla's surrounding buildings, the hotel's original facade is intact, meaning that the plaster and stone exterior blends in well with the city's other 5,000-plus colonial buildings.
