 <title>Shepherd&#039;s Pie Is a Satisfying Way to Use Leftover Lamb</title>

Instead of browning raw lamb, like the following recipe suggests, I sautéed the veggies and added the cooked chopped lamb with the tomato paste. While there are tons of shepherd&#039;s pie variations out there, I chose this one because it has a scallion-cheddar cheese crust on top of the mashed potatoes! 1 tablespoon olive oil&lt;br /&gt;
1/2 pound minced British lamb&lt;br /&gt;
1 pound minced beef&lt;br /&gt;
2 medium onions, peeled and chopped&lt;br /&gt;
3 carrots, peeled and chopped very small&lt;br /&gt;
1/2 pound cremini mushrooms&lt;br /&gt;
1 level tablespoon tomato paste&lt;br /&gt;
1 tablespoon chopped fresh thyme leaves&lt;br /&gt;
2 tablespoons chopped fresh parsley leaves&lt;br /&gt;
1/2 teaspoon ground cinnamon&lt;br /&gt;
1 level tablespoon all-purpose flour&lt;br /&gt;
1 cup red wine&lt;br /&gt;
1 1/2 cups fresh beef stock&lt;br /&gt;
Salt&lt;br /&gt;
Freshly ground black pepper&lt;br /&gt;
&lt;b&gt;For the crust:&lt;/b&gt;&lt;br /&gt;
2 pounds Yukon gold potatoes&lt;br /&gt;
2 tablespoons butter&lt;br /&gt;
Salt&lt;br /&gt;
Freshly ground black pepper&lt;br /&gt;
1 cup scallions, cleaned and chopped&lt;br /&gt;
1 cup mature Cheddar, coarsely grated&lt;/p&gt;
&lt;p&gt;&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Pre-heat the oven to 400 degrees F.&lt;/li&gt;
&lt;li&gt;Heat olive oil over medium-high heat in a Dutch oven or deep saute pan. Brown the lamb and beef. Remove the meat from the pan with a slotted spoon.&lt;/li&gt;
&lt;li&gt;Add the onions to the pan and saute until the onions are tinged brown at the edges - about 5 minutes. Add the chopped carrots and cook for 5 minutes.&lt;/li&gt;
&lt;li&gt;Add the mushrooms, tomato puree, thyme, parsley and cinnamon. Stir and saute for 2 minutes. Next, stir in the flour, which will soak up the juice, then stir in the wine and the beef stock. Taste and add salt and pepper, as needed. Return the meat to the pan and bring to a boil. Cover, turn down the heat to low and simmer for about 30 minutes until the lamb is fully cooked.&lt;/li&gt;
&lt;li&gt;Peel the potatoes, cut them into large even-sized pieces and place into a pot of cold, salted water. Bring the water to a boil and cook potatoes until they are tender, about 10 minutes. (Potatoes are done when a knife can easily go through.)&lt;/li&gt;
&lt;li&gt;When the potatoes are done, drain off the water, return them to the saucepan, cover with a clean tea cloth to absorb the steam and leave them for about 5 minutes. Next, add the butter and mash them to a puree. Season with salt and pepper.&lt;/li&gt;
&lt;li&gt;When the meat is ready, spoon it into a 9-by-13-inch baking dish and level it out with the back of the spoon. After that, spread the mashed potato evenly all over.&lt;/li&gt;
&lt;li&gt; Sprinkle the scallions on top of the potato, scatter the cheese over the scallions and bake the pie until the top is crusty and golden, about 25 minutes.&lt;/li&gt;

1 tablespoon turmeric&lt;br /&gt;

1 pound cooked macaroni pasta&lt;/p&gt;

&lt;li&gt;Preheat oven to 350°F.&lt;/li&gt;
&lt;li&gt;In a medium size dutch oven, over low-medium heat, melt the Earth Balance spread. Add flour and vegetable broth. Whisk into a smooth paste.&lt;/li&gt;
&lt;li&gt;Stir in soy sauce, garlic powder, paprika, turmeric, salt and pepper.&lt;/li&gt;
&lt;li&gt;Add nutritional yeast and mix until the sauce is smooth and creamy.&lt;/li&gt;
&lt;li&gt;Add cooked macaroni to the sauce and stir until all the pasta is coated evenly.&lt;/li&gt;
&lt;li&gt;In a small saucepan, melt the Earth Balance spread and toss the breadcrumbs to coat. Top the macaroni with the breadcrumbs.&lt;/li&gt;
&lt;li&gt;Bake for 30 minutes. Let rest for five minutes before serving.&lt;/li&gt;

&lt;li&gt;Bake garlic 45 minutes or until soft when squeezed. Remove; let cool. Continue baking potatoes about 15 minutes or until tender when pierced.&lt;/li&gt;
&lt;li&gt;Unwrap garlic; squeeze pulp from head into a 4-qt pot. When cool enough to handle, peel 3 potatoes, add to pot and mash until nearly smooth. Gradually stir in chicken broth and pepper until blended. Place over medium heat and cook, stirring occasionally, until hot.&lt;/li&gt;
&lt;li&gt;Meanwhile cut remaining potatoes (with skin) in 3⁄4-in. pieces. Stir into soup and cook until hot. Serve with some or all the toppings. &lt;/li&gt;

1 small butternut squash (about 2 1/4 pounds), peeled and cut into 1-inch cubes&lt;br /&gt;

&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Heat the oven to 450°.&lt;/li&gt;
&lt;li&gt;Coat the chicken quarters with 1 tablespoon of the oil, 1/2 teaspoon of the salt, and 1/8 teaspoon of the pepper. Arrange the chicken quarters, skin-side up, in a large roasting pan.&lt;/li&gt;
&lt;li&gt;Toss the cubes of butternut squash with the remaining 2 tablespoons of oil, 1/4 teaspoon of salt, and 1/8 teaspoon of pepper, and the sage. Add the cubes of squash to the roasting pan.&lt;/li&gt;
&lt;li&gt;Cook, stirring the squash occasionally, until the chicken breasts are just done, about 20 minutes. Remove the pan from the oven and remove the breasts from the pan. Tilt the roasting pan and spoon off most of the fat from the pan. Return the pan to the oven. Continue cooking until the chicken legs and the squash are done, about 10 minutes longer. Remove the chicken and squash from the pan.&lt;/li&gt;
&lt;li&gt;Pour off the fat from the roasting pan. Set the pan over moderate heat and add the water. Bring to a boil, scraping the bottom of the pan to dislodge any brown bits. Boil until reduced to approximately 2 tablespoons. Add any accumulated juices from the chicken. Spoon the sauce over the chicken.&lt;/li&gt;
