Monday's Leftovers: Sautéed Shrimp & Couscous

If you've got leftover shrimp in your fridge, it's the perfect start of a weeknight meal. The quick-cooking shellfish, when combined with couscous and field greens, is a healthy, delicious meal.

It takes a minimal amount of time to make, so you can even prepare extra shrimp and field greens to put in a salad for the next day's lunch.

To add this recipe to your repertoire,

The couscous takes a mere five minutes to cook and the fish requires about 10 under the broiler.

Although the ingredient list calls for store-bought salsa, if you have time, make it fresh! This recipe is versatile, balanced, and delicious. Get it now and

Sunday BBQ: Grilled Pork and Pistachio Couscous

In this rendition, grilled lemon and pork tenderloin are served with broccoli rabe and pistachio couscous. As this cut of meat is fairly lean, it makes for a healthy, well-rounded meal. To get the recipe, which is perfect for both Summer and Fall,

Would You Eat This Lamb and Couscous Without Utensils?

Last week before interviewing Marcus Samuelsson, I ate his African spiced lamb chops and mango lime couscous. The pairing was delicious: the meat was moist and succulent and the couscous flavorful and exotic.

While the ingredients were not grossly insane, the method for eating the dish was out of the ordinary. There were no serving utensils and the chef requested that we eat the lamb while using the bone to scoop the couscous out of the bowl.

I greatly enjoyed sucking on the lamb bone as it doubled as a spoon, however I can understand how some people might not be interested in eating without utensils. Do you have a problem with it?

Come Party With Me: Moroccan Dinner — Dessert

Couscous is a staple common to North African cuisine. Instead of serving it as a savory part of my dinner menu, I decided to use it to make a sweet dessert. Most people have had rice or bread pudding, but the majority of my guests have yet to experience couscous pudding.

This variation is made with fluffy whipped cream, sautéed bananas, and fresh pineapple. This type of dessert is ideal for a dinner party because it can be made well in advance. To take a look at the recipe,

Fast & Easy Dinner: Grilled Vegetables and Chickpeas with Couscous

Especially when the weather is pleasant, grilling is an excellent technique for rapid, maximized flavor cooking. In this recipe a plethora of vegetables are seared on the grill. The veggies are tossed with a fragrantly spiced couscous, fresh herbs, and filling garbanzo beans. A salty feta cheese is the finishing touch to this hearty, vegetarian dish from MyRecipes.com.
Fast & Easy Dinner: Couscous Paella

Paella — Spain's most well known rice dish — is not necessarily a great option for a quick and simple dinner. However, using couscous instead of rice cuts the cook time in half without reducing the flavor or integrity of the dish. There is a lot of chopping and sautéing in the traditional version, but this couscous variation comes together rapidly with minimal chopping. Smoky kielbasa provides heat, and cherry tomatoes add freshness.

For the recipe,

Fast & Easy Dinner: Chicken Breasts Stuffed with Couscous

Normally I stuff chicken breasts with creamy cheese or buttery ham. When I came across this recipe for herbed couscous stuffed chicken, I got very excited. A much healthier alternative to cheese or pork, couscous is equally delicious. I love how it makes an entire meal in one chicken breast!

Feel free to get creative, if you have a bunch of parsley on hand use that instead of mint. Want to know how it's made?

Butternut squash are best from early Fall to Winter, and although Spring means a plethora of appetizing vegetables, it's sad to see the squash go. To make the most of it while we can, serve a curried version of the veggie tonight. It's a delicious meal atop couscous, flavored with peanuts and chutney. This recipe is perfect for the vegetarian in your life, so get it now and

Fast & Easy Dinner: Moroccan Meatballs Over Couscous

After an exhausting day, don't be ashamed to get help from the supermarket. Especially on a Friday night. By then, the last thing you feel like doing is mixing and frying a batch of 36 meatballs. However, if you purchase a pack of frozen or premade ones, you can have a delicious dinner in twenty minutes. Get the fragrant sauce going quickly by chopping the onions and garlic in a food processor. Serve with a cold beer, a glass of Zinfandel or a full bodied Chardonnay. Drooling over the picture at left? Well get the recipe and make it now! -

TV Dinners: Babel - Couscous

If you've seen Oscar Nominated Babel then you know that traveling in a foreign country isn't always fun and games. However, if you can put all of your fears aside, you'll realize that there are some mighty good eats to be had.

However, if after seeing Babel, you've decided to cross Morocco off of your list of places to visit, then you'll just have to learn to cook the food at home. Because from what I've experienced, authentic Moroccan food is absolutely amazing.

To check out a fantastic recipe for Sweet and Nutty Moroccan Couscous and see a clip where Cate Blanchett and Brad Pitt argue over dinner (as in argue over it, not argue about it),

Today's Special: Turkey Couscous Salad with Pomegranates

I am addicted to trying new things. One of the reasons I enjoy cooking is because it serves as an outlet to try tons of new ingredients, tastes, flavors, and combinations. Recently I have been into using couscous. He absolutely loved it. Tonight I suggest we open our minds and palates and make a dish with an unfamiliar ingredient like couscous (and pomegranates!). For the recipe,
