Healthy Menu Options May Lead to Overindulgence

The question "would you like fries or salad with that?" is one regularly asked by waitresses across the nation. While it's easy to think the answer is a personal decision that reflects one's eating habits, a soon-to-be-released study shows differently.

The New York Times reports that "the presence of healthy options on a menu can induce some diners to eat less healthily than they otherwise would." In the study, a group of college students were given two menus. One featured regular fast-food items (chicken nuggets, french fries, etc.) and the other was exactly the same with the addition of a salad. When choosing from the first menu, only 10 percent of the subjects ordered french fries. However, when given the menu with salad as an option, 33 percent of the same subjects asked for french fries.

This is an interesting concept and I'm curious to read the report, by the Journal of Consumer Research, when it comes out. Until then, I can only speak about my own experiences and the truth is I've looked at salad on a menu many times and thought, "I should have a salad. . .nah, I'll get the fries." What do you think of the news? Have you ever shunned a healthier dish for something more indulgent?

Fast & Easy Dinner: Fish and Chips

To celebrate St. Patrick's Day tonight, serve your family a classic pub favorite. Although fish and chips is a traditionally British dish, this recipe pairs perfectly with an Irish pint.

Large chunks of fresh fish fillets are dipped in buttermilk and coated in cornmeal. The chips are baked in the oven, resulting in potatoes that are crisp, but not overly oily. For the uncomplicated recipe, read more.

Fish and Chips
From Martha Stewart

Ingredients

2 large russet potatoes (about 1 pound), scrubbed
Four 6-ounce sea bass or cod fillets (about 1 inch thick), skin removed
For the seasoning:
2 tablespoons extra-virgin olive oil
1/2 teaspoon coarse salt
1/2 teaspoon freshly ground pepper
For the coating
1/3 cup low-fat buttermilk
1/3 cup yellow cornmeal
1/4 teaspoon paprika
For the garnish
Lemon wedges
Malt vinegar

Directions

Preheat oven to 450 degrees. Arrange racks in upper and lower thirds of oven.
Cut potatoes lengthwise into 1/4-inch thick strips. Rinse well in a large bowl of cold water, and pat dry with a kitchen towel. Transfer to a large baking sheet. Drizzle with 1 tablespoon oil, and sprinkle with 1/4 teaspoon each salt and pepper; toss well. Arrange strips in an even layer on the sheet. Bake on lower rack until golden and crisp, about 30 minutes.
Meanwhile, place fish fillets in a large bowl. Add buttermilk, and gently turn fish to coat.
In another shallow bowl, combine cornmeal, paprika, and remaining 1/4 teaspoon salt and pepper. Add fillets to cornmeal one at a time, turning to completely coat. Transfer to a plate while repeating with remaining fillets.
Heat a 12-inch cast-iron skillet over medium-high heat. Add remaining tablespoon of oil; swirl to coat. Add fillets, being careful not to overcrowd pan. Cook until nicely crusted, about 1 minute; turn over with a spatula.
Place skillet in top third of oven, and cook until firm but beginning to flake when pressed in the center, about 8 minutes.
Transfer to plates, and serve with potatoes. Serve lemon wedges and malt vinegar on the side.

Serves 4.

First there was the ad campaign - that debuted at the Super Bowl - in which its brand's fictitious face, Jack, was hit by a bus. Although Jack lies in a coma, the company asked consumers to show their support by enjoying free curly fries and free tacos. Now, Jack's come out of his coma and naturally to celebrate, the chain is giving away fast food, again. All day tomorrow, Tuesday March 10, you can score a free small fry (natural cut or seasoned curly) and fountain drink of your choice. To obtain the food, you'll need to print this coupon. Although Jack is out of his coma, he has yet to speak publicly about his new logo.

Disneyland Trains Now Running on Frying Oil

Can you imagine a land where you would go to McDonald's to purchase fuel for your car? Well that world might not be too far off. As of last week, all of the trains at Disneyland's Los Angeles theme park run on a biodiesel oil made from discarded cooking oil. Not only is the park saving money by reusing already purchased oil, but they are demonstrating how large corporations can make an effort to go green. Disneyland's five railroad trains are ridden by an estimated 6.6 million people each year using up about 200,000 gallons of fuel. The resort will generate enough cooking oil to provide half of this fuel. Disney's executive chef, Chris Hustesen, loves the idea and hopes the switch will "make more guests hungry for our fries."

Considering that I always reuse my cooking oil, I admire Disneyland's resourcefulness and commitment to being eco-friendly. I can't help but wonder if other companies will follow their lead. What do you think of the news? Do you recycle old frying oil?

Two-Foot-Long French Fry Found at South Carolina Arby's

At an Arby's in Hendersonville, SC, Hannah Odom reached to grab a curly fry and came up long - two feet long, to be exact. In the footage below, captured by a local station, the 15-year-old shows off the unusually long fry, which she's keeping in the refrigerator. She has refrained from auctioning off the item on eBay or eating it, instead waiting to hear back from the Guinness Book of World Records. The last known world record was for 6.75 inches, a record that Odom has edged out by 17.25 inches. She expects to hear back from Guinness representatives in three to four weeks.

What I couldn't figure out after watching the clip below was how the record-long fry managed to go unnoticed by the person who cut and cooked the fry. How would you react if this happened to you? Would you have just eaten it?
