Not Your Regular Nachos: Nacho Bites

This week I had my banker over for dinner and I decided to wow him with a Tex-Mex-inspired meal. Naturally, nachos were on the menu. Since I wanted something a little healthier than chips and melted cheese for the main course, I served the nachos as appetizers. To make them bite sized, I used Tostitos scoops. Each chip bowl is filled with a classic ground beef taco mixture and topped with cheese. The mini edible bowls are broiled until the cheese is melted and the chips are crispy.

These nachos are incredibly scrumptious and this recipe is easily adaptable, so feel free to get creative! The scoops would be wonderfully delicious with grilled chicken or black beans. For more details on my variation,

Fast & Easy Dinner: Greek Pizza with Feta

I have a weakness for pizza, it's one of my favorite foods and I love it in all forms. Tonight I am treating myself to a Greek style pizza. Meat seasoned with cloves, cinnamon, allspice, and oregano is baked atop a store bought dough. Red onion, cherry tomatoes, and feta cheese finish off the tasty dish. To take a look at the recipe I'll be using,

Recall Warning: Rochester Meat Company Recalls Ground Beef

Listen up! The first ground beef recall of 2008 has arrived. The Rochester Meat Company of Rochester, Minn., has voluntarily recalled over 180,000 lbs. of ground beef due to a possible E. coli contamination. The recall comes after five illnesses in Wisconsin and one in California.

The scariest part is that the product is actually not available on a retail level, but is sold for commercial purposes. So hopefully the places where you're eating ground beef are being diligent in their practices. Make sure that ground beef patties have been cooked to an internal temperature of 160°F. I know, some of you prefer yours a little more rare than that, but it's better to be safe than sorry, no?

If you're concerned about the meat your restaurant has, find out which boxes are being recalled.

Fast & Easy Dinner: French-Fry Pie

Some Fridays, I arrive home exhausted from a hectic and busy week. I'm not afraid to admit that on these days, I receive a lot of help from the grocery store. Tonight's meal consists of only three easy ingredients and makes for a filling, effortless meal. Flavor ground beef with marinara sauce, and top the whole thing with shoe string French fries. It's a deconstructed version of the classic shepherd's pie, but without all the chopping and stirring. Get the recipe now,

Fast & Easy Dinner: Beef & Bean Stuffed Peppers

However, making Tex-Mex at home allows you to control the ingredients. For tonight's simple and scrumptious dinner, cereal provides crunch, low fat cheese is used in moderation, and large peppers replace flour tortillas. All of these substitutions help create a more health conscious dinner. To get the recipe to this beautifully presented meal,

An omelet full of meat (or beans), tomatoes and potatoes is a hearty and filling dish, and yet whips up together in very little time. You can use ground beef, or leftover beanburger, as the main protein, or change it to suit your needs. For a simple recipe for a jampacked omelet,
