Since the holiday season is peak baking season, I figured there's no better time to get a refresher course on baking pies. At a local Williams-Sonoma, I sought the wisdom of San Francisco-based private chef Jill Nevard, who offered some tricks to making flaky, buttery, melt-in-your mouth pie crust. After drooling over Party's pumpkin cake and these pumpkin pies, I wanted to experiment with my own unique concoction: a traditional pumpkin pie filling with baklava-inspired crust and streusel topping. With a belly full of Thanksgiving fixings, eating a whole piece of pie can be a rather daunting task, so I made bite-size pies to satisfy everyone's sweet tooth. The pumpkin pie filling and walnut-oatmeal streusel are simple to make, but the cinnamon-sugar phyllo cups are more time consuming due to the very delicate nature of phyllo.

While nine bucks is a lot of money to spend on a slice of pie for me to eat (read: gone in minutes), it's totally reasonable for these jumbo toy pieces filled with organic catnip.
Dish out this cute present for resident felines at Thanksgiving dinner (so they don't get jealous of their lucky dog counterparts). I plan on eating some pumpkin pie myself so I'm choosing this one, but Catzilla Crafts' Etsy store "bakes" up a bunch of goodies including cakes, donuts, eclairs, and even (my fave) banana pancakes.
