Coarse salt and ground pepper&lt;br /&gt;
2 tablespoons tomato paste&lt;br /&gt;
1 pound ground beef sirloin&lt;br /&gt;
3 garlic cloves, minced&lt;br /&gt;
1 package (10 ounces) frozen corn kernels&lt;br /&gt;
3 packed cups loose baby spinach (about 5 ounces), torn into pieces&lt;br /&gt;
2 cups (8 ounces) shredded Monterey Jack cheese&lt;br /&gt;
Fresh cilantro sprigs, for garnish (optional)&lt;br /&gt;
Sour cream (optional)&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Preheat oven to 400 degrees. Using a paring knife, trim tortillas to fit a 9-inch springform pan (use the removable bottom of the pan as a guide). Assemble pan with the bottom upside down; lightly oil bottom and sides. Set aside.&lt;/li&gt;
&lt;li&gt;In a large skillet, heat oil over medium. Add onion, cumin, and red-pepper flakes; season with salt and pepper.&lt;/li&gt;
&lt;li&gt;Cook until onion has softened, 3 to 5 minutes. Stir in tomato paste.&lt;/li&gt;
&lt;li&gt;Raise heat to medium-high; add beef and garlic. Cook, breaking up meat with a spoon until no longer pink, 4 to 6 minutes. Add corn and spinach; stir until spinach has wilted, about 2 minutes.&lt;/li&gt;
&lt;li&gt;Place one tortilla in the prepared pan. Spreading evenly, top with 1 1/2 packed cups beef mixture, then 1/2 cup cheese. Repeat with two more layers. Top with last tortilla, and sprinkle with remaining 1/2 cup cheese.&lt;/li&gt;
&lt;li&gt;Bake pie until top is lightly browned, 15 to 20 minutes. Run knife around edge of pan; remove sides. Using two wide metal spatulas, lift pie from bottom of pan, and transfer to a cutting board. Cut into wedges. If desired, serve with cilantro and sour cream.&lt;/li&gt;

 <title>What Went Wrong? Custard Not Setting </title>

As you can tell by the picture, the custard would not set! The recipe seemed simple enough; it&#039;s a graham cracker crust filled with cinnamon-berry custard and topped with syrupy peaches. However, I ran into some technical difficulties.&lt;br /&gt;
The first time I made the custard it would not thicken, but I realized it was because I didn&#039;t add enough cornstarch. The second time, I thought everything went well, but after sitting in the fridge overnight, the custard was soupy and liquidy. While the flavor was superb (I served it to my guests parfait style), the texture was all wrong. I&#039;ve made custard successfully in the past, and honestly have no clue what went wrong. &lt;/p&gt;
&lt;p&gt;Can you help me? Should I have let the custard boil longer? Did it need more fridge time? &lt;/p&gt;

1/2 teaspoon vanilla extract&lt;br /&gt;
2 tablespoons (1/4 stick) unsalted butter, cut into 1/2-inch cubes&lt;br /&gt;
1 tablespoon (about) milk&lt;br /&gt;
Vanilla ice cream

&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Position rack in lower third of oven and preheat to 425°F.&lt;/li&gt;
&lt;li&gt;Whisk 1 cup sugar, cornstarch, and salt in medium bowl to blend. Stir in cherries, lemon juice, and vanilla; set aside.&lt;/li&gt;
&lt;li&gt;Roll out 1 dough disk on floured surface to 12-inch round. Transfer to 9-inch glass pie dish. Trim dough overhang to 1/2 inch.&lt;/li&gt;
&lt;li&gt;Roll out second dough disk on floured surface to 12-inch round. Using large knife or pastry wheel with fluted edge, cut ten 3/4-inch-wide strips from dough round.&lt;/li&gt;
&lt;li&gt;Transfer filling to dough-lined dish, mounding slightly in center. Dot with butter.&lt;/li&gt;
&lt;li&gt;Arrange dough strips atop filling, forming lattice; trim dough strip overhang to 1/2 inch. Fold bottom crust up over ends of strips and crimp edges to seal. Brush lattice crust (not edges) with milk. Sprinkle lattice with remaining 1 tablespoon sugar.&lt;/li&gt;
&lt;li&gt;Place pie on rimmed baking sheet and bake 15 minutes. &lt;/li&gt;
&lt;li&gt;Reduce oven temperature to 375°F. Bake pie until filling is bubbling and crust is golden brown, covering edges with foil collar if browning too quickly, about 1 hour longer. Transfer pie to rack and cool completely. Cut into wedges and serve with vanilla ice cream. &lt;/li&gt;

If the grocery store conveniently sold premade pie crusts, why on earth would I make one? Then I realized the reason I used store bought pie dough was because I was horribly afraid of being a pie-dough failure. In matters that apply to the kitchen, instead of running from my fears, I prefer to confront them.&lt;/p&gt;
&lt;p&gt;So I scoured the Internet reading countless pie crust recipes, techniques, and tips and I made my very first pie dough. While it wasn&#039;t the best crust ever, it was flavorful and buttery. The rewarding and addictive (all of a sudden I wanted to make pie shells over and over again) experience boosted my confidence level as a home cook. &lt;/p&gt;
