Secret Ingredient: Chicken Recap

First of all, The next challenge is going to be a bit different and is actually going to last a while longer. Check back in a little while to see what we're up to.

Now on to the chicken recipes! Thanks to everyone who submitted their creations, there were some really impressive recipes submitted this time. We had lovely flavors such as Chicken & Broccoli Alfredo, Easy Italian Chicken, Mexican Style Slow Cooker Chicken and Instant Gratification Chicken. However my favorite recipe was definitely the one submitted by TeamSugar member andaman. Andaman has provided one of her original recipes for a highly aromatic Thai curry. I don't know about you guys, but I think this recipe for Thai Chicken Massaman Curry sounds unbelievably fantastic. To check it out, read more

Recipe Submitted by TeamSugar member andaman.

Here is my chicken recipe . It's 'thai chicken massaman curry'. The curry is sometimes called Muslim curry because the origin is from the muslim communities in Thailand. If you like spices this is the curry for you. It is highly aromatic.

Paste

100 grams Asian Shallots (stronger than the western types and much smaller, available in Asian stores)

50 grams Garlic Cloves
40 grams Pistachio Nuts
40 grams Pine Nuts
3 Whole Cardamon Pods
1 TB Cumin Powder
1 and 1/4 TB Turmeric Powder
1 TS Cloves Powder
1TS Smoked Paprika
1/2 TB Hot Chilli Powder
60 grams Galangal
1/2 TS Fennel Seeds
1 TS Amchoor Powder (It's dried mango powder, available in Indian stores)
1 TS Salt
1 TB Mild Olive Oil or Vegetable Oil
1/2 TS Saffron

Others
3 Skinless Chicken Breasts
2 Floury Potatoes
1 Bay Leaf
4TB Tamarind Juice
1 Can (400ML) Coconut Milk
40 grams Toasted Unsalted Peanuts (optional)

Methods
1) Peel shallots and garlic cloves. Place them under the grill until they start to blacken a little.
2) Cut the chicken breasts into small cubes. Peel the potatoes and cut into four before parboiling them.
3) Toast the pine nuts and pistachio nuts until they are slightly brown in a pan.
3) Blend the garlic, shallots, and nuts in a blender.
4) Add the oil and the rest of the ingredients. Continue to blend until it forms a smooth paste.
5) Open the coconut can and scoop the creamy part, usually it sits at the top of the can, into a wok. Pour in the curry paste and stir until it starts to bubble.
6) Add Chicken, potatoes, bay leaf and the rest of the coconut milk left in the wok.
7) After the chicken is cooked, taste the curry and season with salt, sugar, more chilli powder and tamarind juice. The curry should taste mildly sour. If you like nuts you can add toasted unsalted peanuts at the end. In Thailand it's common to find peanuts in this curry. I, however, prefer to work the nuts into the paste.

I actually cook for a living. I would very much love to hear feedbacks. Please feel free to make suggestions. Some recipes call for cinamon, I would love to hear if anyone has experimented with it?

Print recipe with images | without images

Secret Ingredient: Cumin Recap + Chicken is Next!

The next secret ingredient is chicken.
I've been pretty specific with the ingredients lately, so this week I thought I'd take a broader step. Put all of your best chicken recipes (I'm talking soups, pot pies, bbq, anything!) up on TeamSugar and tag them with the following phrase: "Secret Ingredient Chicken" - make sure it's all one phrase, no commas, etc. (or, alternatively, you can also find old recipes you've already posted and add that phrase to the keyword section). I can't wait to see what you guys come up with! Thanks for playing along, we'll recap your entries next week!

This week, the secret ingredient was cumin. There were some delicious looking recipes including Cumin Coriander Chicken, Homemade Burgers and Salsa (yum!), but my favorite was definitely these Frijoles Negros from user DesignRchic. It's a lovely Cuban dish that doesn't require the beans to be soaked for hours. To check out her recipe, read more

Recipe submitted by TeamSugar member DesignRchic

Here's another Cuban dish I'd love to share with you all and LisaK
It compliments a side of white rice along with any meat. Typically, black beans are made with a package of dry beans, boiled and soaked for an hour, sometimes you can use a ham bone for flavor, BUT most of us want something that’s quicker, so here’s my version.
Ingredients
Ingredients

1 can black beans
3 cloves of garlic, peeled and crushed (or use minced garlic)
A quarter of sweet onion, peeled and chopped
1 Half bell pepper, chopped
3-4 strips of bacon, chopped
3 teaspoons ground cumin
Small handful of chopped cilantro (cut off stems, and only use leaves)
Small handful of chopped parsley (cut off stems, and only use leaves)
1 teaspoon of Adobo powder (shown in picture)
salt and pepper to taste

In a medium sauce pan, add the chopped bacon bits and fry. Next, add the onion, pepper, and garlic, cook until onion is partially transparent.
Step 1

Next add in the can of black beans (include the water that comes in the can). Add in remaining ingredients & spices and leave on a low heat for 15 minutes.
Step 2

Add salt & pepper to taste.
Compliment with white rice!
Serves: 4
Time to Prepare & Cook: Approx 25 minutes

Aye Pero Que Rico!!!

Print recipe with images | without images

Secret Ingredient: Cumin

Okay, so I'm going to throw a wrench in to an otherwise working system...

I've received some emails wondering how to submit recipes to the Secret Ingredient challenge that have already been posted/are are going to be posted in other groups (Kitchen Goddess, Let's Have a Drink, etc.).

So from now on, we'll try taking advantage of the cool keyword thing. Each week I'll tell you exactly which keywords to use on your recipe. This way you can post them in any group you want! If you don't have another group, feel free to keep posting them in the Secret Ingredient group.

This week the secret ingredient is cumin.

So please give your new recipes (or edit old recipes) the keyword phrase: Secret Ingredient Cumin.

Secret Ingredient Recap: Bananas

This week the secret ingredient was bananas and I really enjoyed the recipes you guys came up with. We had delicious crispy Fried Bananas, indulgent Frozen Banana Mousse on top of brownie torte, and frozen Chocobananas. However the one that really caused me to start drooling was the Banoffee Pie (banana + toffee = banoffee) submitted by TeamSugar member SaraSmile. Her mother made a version with rich gourmet caramel sauce, but her recipe has us creating our own toffee. It sounds delicious and highly sinful (shhh... dont' tell FitSugar). To check it out read more

Oh and if you're wondering, the next Secret Ingredient will be announced shortly, we're making a few changes to how everyone submits. Stay Tuned. Now on to that pie!

Recipe submitted by SaraSmile

One of the many positives of having a brother who lived in London was that my mother became obsessed with recreating this desert that she had while she was there, banoffee pie (the name gets the celebrity couple treatment - banana + toffee = banoffee!). My mother made her version with a rich gourmet caramel sauce she bought, and I have read suggestions of using canned Dulce de Leche (the toffee is fussy to make from scratch). The pie is delicious, although I will pretty much eat bananas in any figuration!

The recipe below is from Paula Deen, so expect a generous dose of sugar and butter.

Banoffee Pie

1 1/2 cups graham cracker crumbs
10 tablespoons butter, softened
2 (14-ounce) cans sweetened condensed milk
3 large bananas
1 1/2 cups heavy whipping cream
1/3 cup confectioners' sugar
1 teaspoon vanilla extract

Preheat oven to 350 degrees F.

Mix graham cracker crumbs with softened butter and press mixture into 9-inch pie plate. Bake for 5 to 8 minutes.

Lower the oven to 300 degrees F for the toffee filling.

To create toffee filling, caramelize the sweetened condensed milk. Pour the condensed milk into a 9 by 12 by 2-inch glass baking dish. Cover with foil and place dish inside a larger poaching pan. Add water to poaching pan until half way up sides of baking dish. Bake for 1 1/2 hours.

Once both the crust and toffee filling are cooled, spread half of the filling evenly inside crust. Slice the bananas and layer on top of filling. Pour remaining half of filling over bananas, spreading evenly. Whip the cream with the confectioners' sugar and vanilla and spread on top of toffee filling and bananas.
