7 tablespoons Kahlúa or other coffee liqueur&lt;br /&gt;
2 6.15-ounce or four 3.5-ounce boxes champagne biscuits or Boudoirs (about 60 crisp ladyfinger cookies)*&lt;br /&gt;
1 cup semisweet chocolate chips, finely ground in processor&lt;br /&gt;

&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Whisk 1 1/3 cups sugar, 1/4 cup water, 1/4 cup rum, 3 tablespoons brandy, yolks, and nutmeg in metal bowl.&lt;/li&gt;
&lt;li&gt;Set bowl over saucepan of simmering water (do not allow bottom of bowl to touch water). Whisk constantly until mixture thickens and candy thermometer inserted into mixture registers 140°F for 3 minutes, about 5 minutes total. &lt;/li&gt;
&lt;li&gt;Remove bowl from over water. Whisk mascarpone, 1 container at a time, into warm custard until blended.&lt;/li&gt;
&lt;li&gt;Using electric mixer, beat whipping cream, vanilla, 1 tablespoon brandy, and 1 teaspoon rum in large bowl until cream holds peaks. Fold in mascarpone mixture.&lt;/li&gt;
&lt;li&gt;Bring 1 cup water to simmer in small saucepan. Remove from heat. Add 2 tablespoons sugar and espresso powder; stir to dissolve. Mix in liqueur.&lt;/li&gt;
&lt;li&gt;Submerge 1 biscuit in espresso mixture, turning to coat twice; shake excess liquid back into pan. Place dipped biscuit, sugared side facing out, around bottom side of 14-cup trifle dish, pressing against side of dish (biscuit may break). Repeat with enough biscuits to go around bottom sides of dish once. Dip more biscuits and arrange over bottom of dish to cover.&lt;/li&gt;
&lt;li&gt;Spoon 2 cups mascarpone mixture over biscuits; spread to cover. Sprinkle 1/4 cup ground chocolate over, making chocolate visible at sides of dish. Repeat with more biscuits dipped into espresso mixture, mascarpone mixture, and ground chocolate in 2 more layers each. Cover with 1 more layer of dipped biscuits and enough mascarpone mixture to reach top of trifle dish. Sprinkle remaining ground chocolate over, covering completely. Cover and chill overnight.&lt;/li&gt;
&lt;li&gt;Gently press stem end of largest chocolate leaves around edge of trifle. Fill center with smaller leaves. (Can be made 8 hours ahead; chill.)&lt;/li&gt;

&lt;li&gt;In a heavy medium saucepan, combine the remaining 1 2/3 cups of half-and-half with the sugar mixture and the cinnamon. Cook over moderate heat, stirring constantly, until the pudding thickens and comes to a boil.&lt;/li&gt;
&lt;li&gt;Remove from the heat and stir for 1 minute. Stir in the vanilla. Transfer the pudding to a bowl and press plastic wrap on the surface. Refrigerate until chilled.&lt;/li&gt;

&lt;li&gt;Bake cake until golden and springy to the touch, 20 to 25 minutes.&lt;/li&gt;
&lt;li&gt;Cool cake in pan on a rack 20 minutes.&lt;/li&gt;
&lt;li&gt;Remove pan (with cake) from rack and cover rack with a sheet of parchment, then invert rack over cake and flip cake onto rack. Carefully peel off parchment from bottom of cake and cool completely.&lt;/li&gt;
&lt;li&gt;&lt;b&gt;Assemble trifle&lt;/b&gt;: slide cake (on parchment) onto a work surface and arrange with a long side nearest you. Trim cake with a serrated knife to make a 12- by 9-inch rectangle, reserving trimmings, then brush cake and trimmings with Sherry syrup.&lt;/li&gt;
&lt;li&gt;Halve cake crosswise, then cut each half into thirds first lengthwise and then crosswise to total 18 (3- by 2-inch) pieces. Halve each piece diagonally to form triangles.&lt;/li&gt;
&lt;li&gt;Spoon 1/2 cup custard into bottom of trifle dish. Arrange half of triangles over custard in 2 layers, pressing short ends of triangles against side of dish (there should be small spaces in between slices for custard to run through).&lt;/li&gt;
&lt;li&gt;Arrange half of trimmings in the center, cutting them as needed to fit. Spread 1 1/2 cups custard over cake, then spread 1 cup rhubarb purée over custard.&lt;/li&gt;
&lt;li&gt;Cover with remaining cake and trimmings in same manner, then spread remaining custard over. Spread remaining rhubarb purée over custard, leaving a 1-inch border around edge. Chill, covered tightly with plastic wrap, at least 8 hours.&lt;/li&gt;
&lt;li&gt;&lt;b&gt;Make topping just before serving&lt;/b&gt;: beat cream with sugar and Sherry using cleaned beaters until it just holds soft peaks.&lt;/li&gt;

&lt;li&gt;1/2 cup strawberries in bite sized pieces&lt;/li&gt;
&lt;li&gt;6-8 (4 oz). packs &lt;i&gt;Dannon Light &amp;amp; Fit Vanilla Cream&lt;/i&gt; yogurt&lt;/li&gt;
&lt;li&gt;3/4 cup muesli or granola or crumbled protein bar or any other whole grain thing you like to start your day with...&lt;/li&gt;
&lt;li&gt;1/3 cup raw sliced almonds&lt;/li&gt;
&lt;li&gt;1/4 cup uncooked rolled oats&lt;/li&gt;
&lt;/ul&gt;
&lt;p&gt;In a pretty bowl, sprinkle the cranberries on the bottom. Top with 1/3 of your yogurt to cover. Top that with the fresh fruits. Then 1/3 more of the yogurt – then sprinkle on your whole grain of choice, top with remainder of the yogurt and sprinkle the top with the sliced almonds and oats.&lt;/p&gt;
&lt;p&gt;Why I like it: The base of this recipe is a calcium rich vanilla cream yogurt that has only 3 grams of carbs and an impressive 5 grams of protein with only 3 grams of fat. Add to that the red fruits, whole grains, nuts and the touch of vitamin C from the strawberries and you’re good to go. While you’re dishing out your morning portion, why not scoop up a bit to pack and go for a midday snack! &lt;/p&gt;

Special Equipment: Large wide trifle bowl [or any large bowl - preferably clear so that you can see the layers]&lt;/p&gt;

&lt;li&gt;Slice the chocolate pound cake and make jam sandwiches with the cherry jam, and layer the bottom of a large wide trifle bowl. Pour over the cherry brandy so that the cake soaks it up, and then top with the drained cherries. Cover with cling wrap and leave to soften while you make the custard.&lt;/li&gt;
&lt;li&gt;Melt the chocolate on low to medium heat in the microwave, checking after 2 minutes, though it will probably need 4 minutes. Once the chocolate is melted, set aside while you get on with the custard.&lt;/li&gt;
&lt;li&gt;In a saucepan warm the milk and cream.&lt;/li&gt;
&lt;li&gt;Whisk the egg yolks, sugar, and cocoa in a large bowl.&lt;/li&gt;
&lt;li&gt;Pour the warm milk and cream into the bowl whisking it into the yolks and sugar mixture.&lt;/li&gt;
&lt;li&gt;Stir in the melted chocolate, scraping the sides well with a rubber spatula to get all of it in, and pour the custard back into the rinsed saucepan.&lt;/li&gt;
&lt;li&gt;Cook over a medium heat until the custard thickens, stirring all the time. Make sure it doesn&#039;t boil, as it will split and curdle. (Keep a sink full of cold water so that if you get scared you can plunge the bottom of the custard pan into the cold water and&lt;br /&gt;
whisk like mad, which will avert possible crisis.) The custard will get darker as it cooks and the flecks of chocolate will melt once the custard has thickened. And you do need this thick, so don&#039;t panic so much that you stop cooking while it is still runny. Admittedly, it continues to thicken as it cools and also when it&#039;s chilling in the refrigerator.&lt;/li&gt;

&lt;li&gt;When you are ready to decorate, softly whip the cream for the topping [if you don&#039;t have an electric mixer, this could take a while] and spread it gently over the layer of custard. Grate the chocolate over the top.&lt;/li&gt;
