Sear-iously Chic and Easy Tuna Salad

When a friend of mine was raving about a tuna salad she'd recently made, I was envisioning old-school mayonnaise and canned tuna. So I got excited when she sent me the recipe and I realized we were dealing with an entirely different type of tuna salad. This version dresses seared fresh tuna in lime, soy, and wasabi powder for a tangy Asian flavor, which gets a creamy boost from diced avocado. The best part? While this recipe sounds fancier and uses more gourmet ingredients than a classic tuna salad, it's just as easy to whip up. I made it one night after work, and the whole process took less than 20 minutes. I don't know what was more jaw-dropping: the simple preparation or the irresistible flavor. The chunky tuna is quite filling, so served over lettuce with some crackers, this is a highly satisfying weeknight dinner. To get the recipe,

Summer Supper: A16's Tuna Panzanella

A few weeks ago, I raved about a new Italian cookbook called A16 Food + Wine that has a delicious (and unique) meatball recipe. Well, I'm still learning great things from it. This week, I made a panzanella with tuna and capers, another item on the menu at the launch party. Every ingredient, from the briny capers to the fragrant basil, was well-balanced.

This is a fantastic meal to make if you've got too much bread or when your loaf is going stale. I left the capers whole, since I like their saltiness and texture. You can easily adjust the recipe to your liking; get your hands on it (and step-by-step pictures) when you

Fast & Easy Dinner: Curried Tuna Quiche

Lately I've been really into quiche. Quiche can be filled with random odds and ends of ingredients, are quick to throw together, and make delicious leftovers. This quiche recipe caught my eye because it combines two elements I wouldn't normally pair together, curry and canned tuna, to create one delicious dish.

Cooked pasta adds an interesting texture and two types of cheese provide a gooey creaminess. To make this quiche for your family,

Monday's Leftovers: Tuna with Mustard Seed Crust

Before my first attempt to make seared tuna, I was daunted by its sophistication. It wasn't until after that I realized the dish is deceptively foolproof — unlike chicken, you don't have to worry about whether it's cooked through!

Since the outside is seared quickly at high heat and the center of the steak is rare, the fish takes no time to cook. If you prefer more well done tuna, simply increase the cooking time. When searing the tuna in batches, be sure to add another 1 1/2 tablespoons oil for the second round of tuna.

To get the recipe,

Sunday BBQ: Grilled Tuna and Peppers with Caper Vinaigrette

Fish on the grill is classically Summer, and this Mediterranean inspired recipe is simple and fast. The caper sauce is chock-full of flavor, so make as much of it as possible. Toss the leftover sauce over a side of green beans, corn, Summer squash, or broccoli for a colorful, well-balanced meal.

If you don't have a gas grill or aren't able to grill outdoors, you can also cook the tuna on a lightly oiled well-seasoned large (2-burner) ridged grill pan over moderately high heat, turning once, 4 to 6 minutes total. To get the recipe,

In this delicious dinner recipe, the tuna steak is seared in a fennel, black pepper infused olive oil. Grown up ingredients — capers, garlic, and black olives — are stirred into the mayonnaise based dressing.

Served in avocado halves, this salad is rewarding, sophisticated, and scrumptious. Look at the recipe when you

Fast & Easy Dinner: Tuna Tacos With Onions

Although I love fried fish tacos, when the weather is super-hot, I prefer grilled fish tacos. This recipe for tuna tacos is the perfect dinner on a warm Summer day. The red onions are caramelized and seasoned with chipotle powder, oregano, and red wine vinegar. The tuna is pounded thin before being grilled. A fresh, crunchy salsa combines mangoes, jalapeños, and cucumber. If this recipe sounds interesting to you, get it now after you

The salsa is made like a vinaigrette with fresh parsley, garlic, capers, mustard, and olive oil.

Although I have yet to experience his delicious cuisine, Brian of SF Weekly, recently savored pig's trotter, pig's heart, and much more at Incanto.

His favorite dish — chilis and bones — consisted of "lengths of meaty tuna spine grilled with a ton of chili, garlic, peppers, capers and mint." Cosentino recommended the tuna spine be consumed like ribs. Being an adventurous eater, I would love to taste this tuna spine especially with such a scrumptious sounding sauce!

How about you? Would you eat these chilis and bones?

Killer App: Endive Boats

The other night I got home from work and was starving. Unfortunately we had late dinner plans that evening, so I couldn't chow down too heavily. We also had limited supplies in our cabinets; there was no bread, crackers, or fruit to snack on. Oddly there were several heads of fresh endives and I figured that was a good place to start.

Endive is great in that you can trim the bottoms off and use the leaves in lieu of crackers. Sometimes I just dollop a mixture of blue cheese and candied walnuts on the ends, and other times I use a tapenade or a hummus. This time I ended up <strike>cleaning out my pantry</strike> blending canned tuna, hummus — it was a nice replacement for mayonnaise — sundried tomato/olive tapenade, and chopped cherry tomatoes into a creamy mixture. I then placed a small spoonful on each end. It ended up being the perfect snack and I was able to save the rest of the mixture — which I put on top of a bed of leafy greens — for lunch the next day.

If you've never had endive, I suggest you give it a try. The outer leaves tend to be more bitter than the inner ones, which are creamy and mild. Just think of them as carb-free savory crackers, and top them with whatever you feel like! They're a great personal snack and make for an elegant appetizer. Most people are always thrilled by them, so give it a go and let us know what you make!

Fast & Easy Dinner: Linguine and Tuna with Spicy Orange Sauce

Although you may not think of canned tuna as a ingredient to use in pasta, I highly recommend you give it a try. Flavorful chunks of meaty packed-in-olive-oil tuna work best for this healthy, midweek meal. The greens and whole wheat pasta are lightly coated with a fragrant sauce before being topped with tuna. Fresh orange juice, spicy red pepper flakes, and delicious dijon mustard pack the sauce with punch. To get this rewarding recipe,

Fast & Easy Dinner: Bacon-Wrapped Tuna Steaks with Frisée Avocado Salad

Tuna cooks well with this technique because it's a fatty, firmer fish. Arranged over a salad of frisée and avocado, and dressed with a simple vinaigrette, this bacon wrapped tuna is delicious. It is effortless and easy to assemble, making it a succulent option for tonight's dinner. To get the recipe,

Monday's Leftovers: Tuna Mango Tortilla Wrap

You can stir into pasta (hot or cold), it tastes great in an omelet, or as crabcake style tunacakes. However, one of my favorite things to do with it is to make it into a cold salad. The salad can be served on bread, toast, crackers or in a wrap. For a quick and easy way to use up last night's leftovers,

Sunday BBQ: Grilled Tuna with Mixed Greens and Fruit

However, sometimes a nice lightly seared tuna steak really hits the spot. On a warm summer night a flavorful marinated piece of tuna, resting on top of a bed of mixed greens with fruit, can do you no wrong. This particular recipe contains a vinaigrette with a long list of ingredients, however you can easily substitute it with a tasty store-bought one instead. To get things started, just

Fast & Easy Dinner: Tuna and Cannellini Bean Salad

You can make this rapid, healthy dinner salad in twelve minutes with ingredients from your pantry. Canned tuna and white beans get freshened up with cherry tomatoes, green beans, and lemon zest for a very Italian-style meal. Serve with a chunk of cheese, a hunk of crusty sourdough bread, and a chilled Pinot Grigio and finish it off with slices of cool watermelon for a relaxing and rewarding Friday night in. Make this tonight - you'll find the recipe when you

Fast & Easy DInner: Salad Nicoise

The quintessential salad contains these basics and additional tasty, fresh ingredients like green beans, tuna, and hard boiled eggs. Traditionally the salad is made with anchovies, but you can omit them if you like. The recipe also calls for a homemade vinaigrette, but you can easily substitute your favorite oil and vinegar based dressing if you are short on time. This hearty salad is a meal on its own - one that is perfect when paired with a French white or bubbly. To get the recipe,

The best part is that everyone can have theirs done the way they want it (make mine rare!). This particular recipe is a combination of delicious tuna, sweet onions and potent garlic. Pair it with a fantastic side salad, and call it a meal! To check out the recipe,

Dishes that he used to make thirty years ago that were delicious then and still are today. It's important to make these comforting dishes every once in a while because they bring a sense of nostalgia to the meal and so that the recipes and flavors are not lost forever. I enjoy making my father's old recipes from 1977 and updating them to suite the needs of 2007. Tuna casserole is a dish my grandma used to make when he was a kid and is wonderful now when made with fresh mushrooms and higher quality tuna steaks. To make this old fashioned favorite,

Reader's Recipe: Sesame-seared Tuna with Coconut Rice

One of these dishes is tuna, just about any kind of tuna. Be it raw, seared, baked, or grilled, as long as it's tuna I love it. So when I saw that reader WhiplashGirlchild posted a recipe for Sesame-seared tuna with coconut rice I knew it was going to be a winner.
Today's Special: Mediterranean Tuna Melt

It's like a grilled cheese, there is something about melted cheese and warmed bread that makes me feel all warm and fuzzy inside. Tuna melts are a great go to meal when you have no time and no fresh food in the fridge. I always have canned tuna, bread, and cheese in my kitchen. Tonight's recipe is a jazzed up version with a Mediterranean twist: garbanzos, capers, and green olives. I've made this open faced sandwich many times and it's absolutely delicious. To make it for dinner,
